Feta and Zucchini Turkey Burgers

Today's post focuses on an easy recipe for some seriously delicious turkey burgers. I made these Monday night after waking up from night shift and was excited to finally get to use my smoked paprika. No seriously. I bought it a few months ago just to have because I love the smell and it really adds a nice layer of flavor to whatever you put it in.

For the burgers you will need:
 
1 pound of ground turkey
1 medium zucchini, shredded
1/2 red onion, diced
4oz crumbled feta cheese
1 teaspoon of dried parsley
1 teaspoon of smoked paprika
1/4 teaspoon of salt
Dash of black pepper
 
Garlic Mayo
 
1/2 cup of mayo
1 tablespoon of lemon juice
2-3 cloves fresh garlic
 
Mix the turkey, zucchini, onion, feta, parsley, paprika, salt, and pepper and form into patties. Cook on medium high heat in a non-stick grill or skillet until cooked through, about 5-6 minutes on each side.



 Mix the mayo, lemon juice, and garlic in a small bowl and spread over the top of your burgers. Top with sliced zucchini, lettuce, tomato or whatever other burger toppings you like. Serve with your favorite burger side; we did sweet potato fries.
